Bettina Icing

Ingredients

  • 1 egg white
  • 1 teaspoon vanilla
  • 1 tablespoon cream
  • 1/2 teaspoon lemon extract
  • 2 cup powdered sugar

Directions

  1. Beat the egg-white, add part of the sugar.
  2. Add the cream, vanilla and lemon extracts.
  3. Keep beating.
  4. Add the rest of the sugar gradually, a little more sugar may be needed.
  5. Beat the icing till very fluffy and until it will spread without running off the cake.
  6. Spread each layer.
