Stuffed Tomatoes

Ingredients

  • 2 pound tomatoes
  • 2 ounce chopped smoked beef
  • 1 chopped shallot
  • 2 -3 mushrooms
  • 1 teaspoon parsley
  • 1 tablespoon bread crumbs

Directions

  1. Cut a small piece off the top of each tomato and squeeze them slightly.
  2. Mix the other ingredients over the fire for a few minutes, then stuff each tomato with some of the mixture, replace the top pieces, sprinkle with breadcrumbs and bake 10 minutes.
