Rice Pudding

Ingredients

  • 3 1/2 cup rice, (1 3/4 pounds)
  • 2 1/2 quart evaporated milk
  • 3 1/2 quart boiling water
  • 2 cup sugar
  • 2 teaspoon salt
  • 1 teaspoon nutmeg
  • 3/4 teaspoon lemon extract

Directions

  1. Wash rice.
  2. Add milk and water and cook over boiling water 1 hour.
  3. Add sugar, salt, nutmeg and flavoring.
  4. Pour into well buttered shallow baking pans.
  5. Bake in a slow oven (325f) 1 hour.
  6. Raisins that have been thoroughly washed may be added just before pouring rice into baking dish.
