Recipe for Sturgeon Balls

Ingredients

  • 3 pound cleaned sturgeon, cut up
  • 1 pint rich milk, (more if needed)
  • 3 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon pepper
  • 1 medium onion
  • 2 tablespoon potato flour
  • 1/2 teaspoon nutmeg
  • 2 tablespoon all purpose flour
  • 1 teaspoon mace

Directions

  1. Grind sturgeon three or four times with onion, put in electric beater, keep beating while adding milk slowly, add rest of ingredients, beat about 20 minutes (more beating the batter), drop part at a time by tablespoons in hot broth made from trimmings of sturgeon.
  2. Cook 15 minutes, this recipe may be cut in half for smaller family.
  3. Sturgeon balls may be frozen for further use.
