Prune Whip

Ingredients

  • 1/3 pound prunes
  • 1 tablespoon lemon juice
  • 3 egg whites
  • 1/4 cup sugar

Directions

  1. Look over and wash the prunes.
  2. Soak for three hours in cold water.
  3. Cook until soft.
  4. Rub through a strainer, and add the sugar and lemon juice.
  5. Cook this mixture for five minutes.
  6. Beat the egg whites until very stiff, and add the prunes when cold.
  7. Pile lightly into a buttered baking dish and bake twenty minutes in a slow oven.
  8. Serve with cream.
