Prune Souffle

Ingredients

  • 1/4 pound prunes
  • 1 tablespoon lemon juice, or 1/4 tsp lemon extract
  • 6 tablespoon sugar
  • 2 egg whites

Directions

  1. Wash the prunes thoroughly, cover with water, and allow to soak three hours.
  2. Cook slowly in the same water until soft.
  3. Remove the stones from the prunes, and save the pulp and juice.
  4. Add sugar, cook until very thick (about three minutes) stir constantly.
  5. Cool, add the lemon juice.
  6. Cut and fold in the stiffly beaten egg whites.
  7. Fill a well-buttered open tin mould half full of the mixture.
  8. Place the pan in another pan filled with boiling water.
  9. Cook in a slow oven until well raised, firm, and light brown in color (about twenty-five minutes).
