Prune Pudding

Ingredients

  • 1 cup cooked, seeded and chopped prunes
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon extract
  • 3/4 cup sugar
  • 1/2 cup cracker crumbs
  • 1/4 cup nut meats, cut fine
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/8 teaspoon salt

Directions

  1. Mix all the ingredients in the order named.
  2. Pour into a well-buttered shallow earthenware dish.
  3. Place the dish in a pan of hot water and bake twenty-five minutes in a moderate oven, or until the mixture is firm.
  4. Serve warm.
  5. Individual amounts may be made in moulds.
