Pan-Broiled Steak

Ingredients

  • 2 pound sirloin steak, an inch and a half thick
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • 1 tablespoon parsley
  • 1 tablespoon lemon juice

Directions

  1. Wipe the meat with a damp cloth.
  2. Have a tin pan sizzling hot.
  3. Place the meat in the pan and cook directly under the broiling flame.
  4. Turn frequently with spoons, as a fork will pierce the meat and allow the juices to escape.
  5. A steak an inch and a half thick should be cooked from eight to ten minutes.
  6. Place the steak on a hot platter.
  7. Sprinkle with salt, lemon juice and parsley.
  8. Dot with butter.
  9. Serve very hot.
