Orange Bread

Ingredients

  • 2 quart chopped orange rind
  • 6 quart flour, (6 pounds)
  • 6 tablespoon baking powder, (2 1/4 ounces)
  • 2 teaspoon salt, (1/2 ounce)
  • 2 quart sugar, (4 pounds)
  • 16 eggs
  • 1 quart evaporated milk
  • 1 quart orange juice
  • 1/2 cup butter, (1/4 pound)

Directions

  1. Cook orange rind in 2 1/2 cups water and 1 cup sugar (1/2 pound).
  2. Sift flour, then measure.
  3. Resift with baking powder, salt and the 2 quarts sugar.
  4. Beat eggs, add milk, orange juice and rind.
  5. Combine with dry ingredients.
  6. Add melted butter.
  7. Pour into greased bread pans and bake in a moderate oven (350f) until brown, about 50 minutes.
