Upside Down Orange Biscuits

Yield: 9 biscuits



  1. Combine butter, orange juice, 1/2 cup sugar and orange rind; cook two minutes.
  2. Pour into nine cup muffin pans.
  3. Sift flour, salt and baking powder, cut in shortening, add milk, stir until dough follows fork around bowl.
  4. Knead one-half minute roll one-fourth inch thick sprinkle with 1/4 sugar and cinnamon.
  5. Roll as for jelly roll, slice one inch thick and place cut side down over orange mixture that has been placed in muffin tin.
  6. Bake in hot oven, 450f 20 to 30 minutes.
