Oatmeal Bread
Ingredients
- 1 quart oatmeal, uncooked (3/4 pound)
- 2 cup boiling water
- 1 cup molasses
- 2 cup evaporated milk
- 2 teaspoon salt
- 2 tablespoon shortening, (1 ounce)
- 2 cakes yeast, or 1 cake dry dissolved in 1 cup lukewarm water
- 2 1/2 quart flour, (2 1/2 pounds)
Directions
- Add boiling water to oatmeal and let stand 1 hour.
- Beat in the molasses, milk, salt, shortening, dissolved yeast and flour.
- Cover and let rise in a greased bowl until doubled in bulk.
- Knead well.
- Shape into loaves and put into greased bread pans.
- Let rise again until doubled in bulk.
- Bake in a hot oven (425f) 15 minutes, then in a moderate oven (375f) 45 minutes longer.
- If dry yeast is used, prepare this dough at night, let rise in a medium warm place over night, and until doubled in bulk in the morning; from this point proceed as above.
