Monterey Jack

Ingredients

  • 4 slices bacon, diced
  • 1 medium onion, sliced
  • 1 green pepper, sliced
  • 2 pound canned red kidney beans
  • 3 tomatoes, diced
  • 2 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1 teaspoon monosodium glutamate
  • 1/2 pound sharp cheddar cheese, grated

Directions

  1. Fry bacon crisp; drain on absorbent paper.
  2. Cook onion and green pepper in 2 tablespoons of the bacon fat until soft but not brown.
  3. Add kidney beans, tomatoes, seasonings, and cheese.
  4. Stir over low heat until cheese melts.
