Mock Hollandaise Sauce II

Ingredients

  • 1 cup milk
  • 2 tablespoon flour
  • 2 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg yolk
  • 1 tablespoon lemon juice

Directions

  1. Make like white sauce (medium), method i.
  2. Just before removing from fire add yolk of 1 egg mixed with a little of the sauce, and when ready to serve, stir in lemon juice.
  3. Cheese sauce variation: add 1/3 cup chopped cheese to white sauce (medium) and stir until melted.
