Mock Hollandaise Sauce II
Ingredients
- 1 cup milk
- 2 tablespoon flour
- 2 tablespoon butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 egg yolk
- 1 tablespoon lemon juice
Directions
- Make like white sauce (medium), method i.
- Just before removing from fire add yolk of 1 egg mixed with a little of the sauce, and when ready to serve, stir in lemon juice.
- Cheese sauce variation: add 1/3 cup chopped cheese to white sauce (medium) and stir until melted.
