Maple Ice Cream

Ingredients

  • 1 cup maple syrup
  • 3 eggs yolks, beaten
  • 1 egg white, beaten stiff
  • 1 pint cream

Directions

  1. Put maple syrup over the fire in a granite dish; heat just to boiling; before removing from the fire, add the beaten yolks of eggs; let them scald, not boil, or they will curdle.
  2. When cool, stir in cream and add the white of an egg beaten stiff, then freeze.
