Lyonnaise Potatoes

Ingredients

  • 2 tablespoon onion
  • 2 tablespoon butter
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 cup cold boiled potatoes, cut in 1/4 -inch cubes
  • 1 teaspoon chopped parsley

Directions

  1. Place one tablespoon of butter in a frying-pan and when hot add the onion.
  2. Let the onion cook until it is brown.
  3. Add the salt and parsley, the rest of the butter, the potatoes and the paprika.
  4. Stir well.
  5. Cook until the potatoes are well browned.
