Lazy Daisy Cake, with Broiled Icing

Ingredients

  • 2 eggs
  • 1 cup flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 tablespoon shortening

Directions

  1. Beat eggs until light, add sugar, beat until blended, add vanilla.
  2. Sift dry ingredients, add to egg mixture; blend well.
  3. Heat milk and shortening, add to batter, beat well.
  4. Pour into pan, bake 30 minutes in 350f moderate oven.
  5. When brown, top with icing, return to oven, or broiler, until coconut is toasted.
  6. Serve warm from cake pan.
