Layer Sponge Cake

Ingredients

  • 5 eggs
  • 2 cup granulated sugar
  • 2 cup flour, sifted
  • 1 teaspoon Royal baking powder
  • 1/2 cup boiling water
  • rose water, flavor to taste
  • 1 cup granulated sugar, for icing
  • 4 tablespoon water, for icing

Directions

  1. Beat the yolks and whites of eggs separately (reserving the white of one egg for icing); then add the sugar to the yolks; then, whites of eggs; next, flour and baking powder; lastly, put in boiling water and place immediately in oven.
  2. Bake in two layers, and when cold ice with following icing: 1 cup granulated sugar, 4 tablespoonfuls water ; boil together seven minutes; then pour into the white of the egg, which has been well beaten.
  3. Beat all the time you are pouring the sugar into the egg; flavor; then spread on cakes when both are cool.
