Kukuricny Chleb (Corn Bread)

Ingredients

  • 1 egg
  • 2 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoon melted butter, or lard
  • 3/4 cup white flour
  • 1 3/4 cup corn meal, white or yellow
  • 1 cup sour milk
  • 1 teaspoon baking soda

Directions

  1. Sift all dry ingredients together.
  2. Add the beaten egg and the sour milk into which the soda has been whipped.
  3. Beat well.
  4. Pour into a well greased 9 by 13 inch pan.
  5. Bake at 400 degrees for 20 to 25 minutes.
  6. Cut into squares and serve hot.
  7. An old czech variation was to substitute about 4 tablespoons chopped cracklings instead of the shortening.
