Ginger Snaps

Ingredients

  • 1 cup molasses
  • 1/2 cup sugar
  • 1/2 cup butter, or lard
  • 1/2 cup warm water
  • 1 teaspoon baking soda, (pearlash equivalent)
  • 1 tablespoon ginger
  • 1 teaspoon salt, if lard is used

Directions

  1. Put molasses, sugar and ginger together, rub pearlash fine and stir into them.
  2. When it foams, add water and lard, then flour enough for a stiff dough.
  3. Knead well, roll into thin sheets and bake in moderate oven.
