Frozen Apricots

Ingredients

  • 2 cup peeled and quartered apricots
  • 2 tablespoon lemon juice
  • 1 cup water
  • 1 cup sugar
  • 1 egg, -white

Directions

  1. Cook apricots, sugar and water until the apricots are soft, about five minutes.
  2. Cool, add the lemon juice and freeze.
  3. When the mixture is half frozen, add the stiffly beaten white and continue freezing until stiff.
  4. More sugar may be used if desired.
