Filled Cookies

Ingredients

  • 1 1/4 quart butter, (2 1/2 pounds)
  • 1 2/3 tablespoon vanilla
  • 1 1/4 quart sugar, (2 1/2 pounds)
  • 5 eggs
  • 3 3/4 quart flour, (3 3/4 pounds)
  • 1/3 cup baking powder, (2 ounces)
  • 1 pint evaporated milk
  • 1 cup water, mixed with evaporated milk
  • jam, fig, or other filling

Directions

  1. Cream butter with vanilla.
  2. Add sugar and continue creaming until light and fluffy.
  3. Add eggs.
  4. Sift flour, then measure.
  5. Resift with baking powder.
  6. Add flour alternately with the diluted milk to the creamed butter and sugar mixture, beginning and ending with flour.
  7. Chill dough, then roll out and cut.
  8. Spread half of each cookie with 1/2 teaspoon jam.
  9. Fold over other half and press edges together.
  10. Place on greased baking sheets and bake in a moderate oven (350f) 8 to 10 minutes.
