Eggs a la Goldenrod

Ingredients

  • 3 hard-cooked eggs
  • 1 1/2 cup milk
  • 3 tablespoon butter
  • 1/2 teaspoon salt
  • 3 tablespoon flour
  • 1/8 teaspoon pepper
  • 1/8 teaspoon parsley

Directions

  1. Melt the butter, add the flour, salt and pepper.
  2. Mix well.
  3. Add the milk gradually.
  4. Cook until a white sauce consistency.
  5. Add chopped egg-whites.
  6. Pour this mixture over slices of toast arranged on a platter.
  7. Force the yolks through a strainer on top of the sauce on the toast.
  8. Garnish with parsley and serve hot.
