Codfish Stew

Ingredients

  • 3 strips bacon, diced
  • 3 large carrots, cut in 3/4 in. cubes
  • 3 sliced medium onions
  • 1/4 cup diced green pepper, (optional)
  • 1 1/2 pound fresh or thawed frozen cod, filets
  • 4 teaspoon salt
  • 1 1/2 pound potatoes, cut in 3/4 inch cubes
  • 1/4 teaspoon pepper
  • 3 cup boiling water
  • 1/2 teaspoon celery seed, or 1/4 cup diced celery
  • 1 No. 2 1/2 can tomatoes
  • 2 tablespoon minced parsley

Directions

  1. Saute bacon in deep kettle or dutch oven until lightly browned.
  2. Remove bacon and set aside.
  3. In same kettle, saute onion slices until tender.
  4. Add fish, cut in 2 1/2 inch pieces, add next seven ingredients.
  5. Simmer covered, until vegetables are tender, about 25 minutes.
  6. Add tomatoes, heat through.
  7. Garnish with parsley and bacon bite.
