Cocoanut Pudding

Ingredients

  • 1 cup milk
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 3 tablespoon cornstarch
  • 3 tablespoon coconut
  • 1 egg yolk
  • 2 tablespoon sugar

Directions

  1. Mix the corn starch and salt in the upper part of the double boiler.
  2. Add the milk slowly, stirring all the time.
  3. Add the sugar.
  4. Place the upper in the lower part of the double boiler and cook, stirring occasionally to prevent lumping.
  5. When very thick, add the egg-yolk, the vanilla and lemon extracts and the cocoanut.
  6. Beat one minute.
  7. Cook again for three minutes.
  8. Place in a buttered baking dish.
  9. Beat the egg-white and when very stiff, add the two tablespoons of sugar.
  10. Pile lightly on the top of the pudding and place in a moderate oven for ten minutes to brown the meringue.
