Chocolate Cream Pie
Ingredients
- 10 ounce bitter chocolate
- 4 1/2 cup sugar, (2 1/4 pounds)
- 1 1/4 cup flour, (5 ounces)
- 1 1/4 teaspoon salt
- 1 1/4 quart boiling water
- 1 1/4 quart evaporated milk
- 15 egg yolks
- 2 1/2 teaspoon vanilla
Directions
- Melt chocolate over boiling water.
- Add sugar that has been thoroughly mixed with the flour and salt and blend well.
- Add the boiling water and boil until mixture thickens.
- Set over boiling water.
- Beat the egg yolks, acid milk and pour slowly into the first mixture, stirring constantly.
- Cook until thickened, about 5 minutes.
- Add flavoring and cool.
- Pour into cool baked pie shells.
- Cover with meringue made of 15 egg whites and brown.
