Chicken Croquettes

Ingredients

  • 3 pound chicken, cooked and cut fine
  • 2 teaspoon salt
  • 1 cup chicken fat
  • 1 pound lean veal, cooked and cut fine
  • 1/2 cup flour
  • 1 tablespoon salt
  • 4 tablespoon chopped green pepper
  • 2 cup milk
  • 2 eggs
  • 1/2 teaspoon paprika
  • 3 tablespoon water
  • 3 cup cracker crumbs

Directions

  1. Melt the chicken fat.
  2. Add the flour and salt and mix well gradually add the milk, stirring constantly.
  3. When the mixture gets thick and creamy, allow it to cook, with an asbestos mat under the pan, for five minutes.
  4. This cooks the flour thoroughly.
  5. Beat one minute to make it creamy.
  6. Add the chicken, veal, green pepper, paprika and salt.
  7. Allow the mixture to cool.
  8. Take one tablespoon of the cooled mixture, and dip in the beaten egg to which the water has been added.
  9. Dip in the crumbs and shape any desired shape, preferably conical.
  10. Allow the croquettes to stand at least one hour before frying.
  11. Fry in deep fat and drain on brown paper.
  12. Keep hot in the oven until serving.
