Braised Short Ribs of Beef with Vegetables

Ingredients

  • 2 pound beef short ribs
  • 1 onion
  • flour
  • 1/2 cup water
  • 2 tablespoon lard
  • 2 carrots
  • 2 teaspoon salt
  • 1/2 green pepper, (if desired)
  • 1/8 teaspoon pepper
  • 2 stalks celery

Directions

  1. Cut short ribs into individual squares and flour them.
  2. Brown slowly on all sides in lard, allowing 20-30 minutes for browning.
  3. Add seasonings, onion (minced), and 1/2 cup water.
  4. Cover closely and simmer for 2 hours.
  5. Add vegetables, cut small, and continue cooking for 30-40 minutes.
  6. Remove meat to platter, thicken the vegetable gravy with 1 tablespoon flour stirred into 1/2 cup water.
Note: Serve with Pan-Fried Potatoes
