Bettina’s 'Quick Pudding'

Ingredients

  • 2 egg whites, stiffly beaten
  • 3 tablespoon nuts, cut fine
  • 4 tablespoon powdered sugar
  • 1/2 teaspoon vanilla
  • 10 dates, cut fine
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking powder

Directions

  1. Beat the eggs stiffly, add the nut meats, dates, vanilla, salt, sugar and baking powder.
  2. Place in a well-buttered tin mould or a pan and bake in a moderate oven for twenty-five minutes.
  3. Allow the mould to stand in a pan of hot water while in the oven.
  4. Serve hot.
