Bettina's Potatoes

Ingredients

  • 1 cup cold cooked potatoes, diced
  • 1 tablespoon pimento, cut up
  • 1 tablespoon butter
  • 1 piece of soft cheese, —a 1-inch cube
  • 1 1/2 tablespoon flour
  • 1/2 teaspoon salt

Directions

  1. Melt the butter, add the flour, cheese and salt.
  2. Mix well, and add the milk gradually.
  3. Cook until thick and creamy.
  4. Add the pimento and potatoes.
  5. Serve hot.
