Bettina’s Mexican Salad

Ingredients

  • 1 cucumber, diced
  • 2 tablespoon green pepper, cut fine
  • 2 tomatoes, cut in one-inch cubes
  • 1/3 cup cottage cheese
  • 1 cup cut celery
  • 1 teaspoon salt
  • 1/4 cup cooked beets
  • 2/3 cup salad dressing
  • 1 tablespoon chopped parsley
  • 4 lettuce leaves

Directions

  1. Mix all the ingredients in order given and serve on lettuce leaves.
