Bettina Cake

Ingredients

  • 1/4 cup butter
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1/4 cup strained orange juice
  • 4 egg yolks
  • 1/2 teaspoon orange extract
  • 7/8 cup flour
  • 1/2 teaspoon lemon extract

Directions

  1. Cream the butter, add the sugar and mix well.
  2. Add the egg-yolks which have been well beaten.
  3. Mix and sift the flour, baking powder and salt, and add these, with the orange juice and the orange and lemon extracts to the first mixture.
  4. Beat vigorously for two minutes.
  5. Fill a twelve-inch square pan which has been prepared with waxed paper, with the mixture.
  6. Bake thirty minutes in a moderate oven.
  7. When cool, cover with the icing and cut into twelve pieces.
