Baked Pinto or Great Northern Beans

Ingredients

Directions

  1. Wash the beans well, and soak overnight in water to cover.
  2. In the morning add 2 cups more water, and cook until almost tender.
  3. Score the rind of the salt pork, put half of the pork with the onion in the bottom of the bean pot, and add the beans.
  4. Mix the molasses or sorghum syrup and other seasonings with a little hot water, and pour over the beans.
  5. Add just enough more water to cover.
  6. Place the rest of the salt pork on top, cover the pot.
  7. And bake the beans very slowly for several hours.
  8. Add a little hot water from time to time to replace that which cooks away or is absorbed by the beans.
  9. Keep the lid on the bean pot until the last hour of cooking.
  10. Then uncover and allow the beans and pork on top to brown.
