Spoon Bread

Ingredients

  • 2 quart corn meal, (2 1/2 pounds)
  • 2 quart boiling water
  • 2 tablespoon salt, (1 ounce)
  • 8 teaspoon baking powder, (1 ounce)
  • 8 eggs
  • 3 1/2 cup evaporated milk
  • 3 1/2 cup water
  • 3/4 cup shortening, (6 ounces)

Directions

  1. Stir boiling water slowly into corn meal.
  2. Let stand until cool.
  3. Mix salt and baking powder with beaten egg yolks.
  4. Add milk and water.
  5. Stir into corn meal.
  6. Beat vigorously.
  7. Add melted shortening.
  8. Fold in beaten egg whites.
  9. Bake in well greased deep baking dishes, or pans, in a moderate oven (350f) 40 to 50 minutes.
