Soft Icing Cake

Ingredients

Directions

  1. Boil 6 ounces of granulated sugar and 3 1/2 tablespoonfuls of water together for eight or ten minutes.
  2. Beat the yolks of four eggs very light ; save out the white of one for the icing; beat the remaining whites to a stiff froth.
  3. Pour the boiling water and sugar over the beaten yoelks and beat until cold.
  4. Sift 1/4 pound of flour, and stir in alternately the whites and the flour.
  5. Flavor with a tablespoonful of extract of vanilla.
  6. Bake in a well-greased pan about twenty minutes (a square pan cuts better slices).
  7. Icing: 1 tea cup granulated sugar and 3 tablespoonfuls of water; boil together about ten minutes.
  8. Beat the remaining white very stiff, pour the boiling water and sugar into it, beat until cold, and spread over top and sides of cake.
