Salted Almonds

Ingredients

  • 1/4 pound almonds, (shelled)
  • 1 teaspoon salt
  • 1 quart boiling water
  • 3 tablespoon olive oil

Directions

  1. Allow the almonds to stand in boiling water in a covered utensil for fifteen minutes.
  2. Rinse off with hot water and place in a colander.
  3. Remove the skins.
  4. Place oil in a frying pan when hot, add nuts.
  5. Stir constantly over a moderate fire for fifteen minutes.
  6. Pour into a clean cloth.
  7. Rub off any oil which has remained on the almonds.
  8. Sprinkle salt over the nuts while warm.
  9. When thoroughly cooled, place the almonds in a covered tin can until ready to serve.
