Rot Kraut (Red Cabbage)

Ingredients

  • 5 pound red cabbage, sliced
  • 3 apples, peeled and sliced
  • 1/2 pound onions, sliced
  • 1/2 cup margarine
  • 1 pint red wine or 1/2 cup vinegar
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon caraway seeds

Directions

  1. Place sliced cabbage in boiling water for 2 minutes; drain.
  2. Cook apples and onions in margarine until soft, add drained cabbage, wine or vinegar and seasoning.
  3. When using vinegar instead of wine, add water to cover cabbage.
  4. Cook slowly for 2 hours, adding more liquid if necessary.
  5. (Reheated red cabbage has a better, flavor, so can be prepared 2 or 3 days in advance and refrigerated).
  6. Serve hot.
