Rice and Peach Pudding

Ingredients

  • 2 1/2 cup rice, (1 1/4 pounds)
  • 2 quart water
  • 3 cup evaporated milk
  • 10 eggs
  • 1 1/4 quart sugar, (2 1/2 pounds)
  • 1 No.10 can peaches, (13 cups)

Directions

  1. Cook rice in the water over boiling water.
  2. Add milk as rice thickens, and continue cooking 30 minutes.
  3. Beat eggs, add sugar and stir quickly and carefully into rice mixture.
  4. Place alternate layers of rice and peaches in a buttered linking dish.
  5. Bake 20 minutes in a moderate oven (350f).
  6. Serve with peach sauce.
