
Rice and Peach Pudding
Ingredients
- 2 1/2 cup rice, (1 1/4 pounds)
- 2 quart water
- 3 cup evaporated milk
- 10 eggs
- 1 1/4 quart sugar, (2 1/2 pounds)
- 1 No.10 can peaches, (13 cups)
Directions
- Cook rice in the water over boiling water.
- Add milk as rice thickens, and continue cooking 30 minutes.
- Beat eggs, add sugar and stir quickly and carefully into rice mixture.
- Place alternate layers of rice and peaches in a buttered linking dish.
- Bake 20 minutes in a moderate oven (350f).
- Serve with peach sauce.
