Potato Patties

Ingredients

  • 2 ounce sieved cold cooked potato
  • 2 teaspoon sugar
  • 1 egg
  • 2 ounce margarine
  • 4 tablespoon cream
  • 2 1/2 ounce flour
  • egg, to glaze
  • 12 almonds

Directions

  1. Mix the potatoes, margarine and 2 ounce.
  2. Flour to a smooth paste, roll out, and line greased patty tins.
  3. Reserve a little of this pastry to cut into thin strips for the top of the patties.
  4. Blanch and chop the almonds, mix together with the sugar, egg, remaining 1/2 ounce flour and cream, and work to a smooth paste.
  5. Fill the cases with this mixture, and place two strips of pastry across the top.
  6. Brush with egg and bake in a hot oven.
