Potato Patties
Ingredients
- 2 ounce sieved cold cooked potato
- 2 teaspoon sugar
- 1 egg
- 2 ounce margarine
- 4 tablespoon cream
- 2 1/2 ounce flour
- egg, to glaze
- 12 almonds
Directions
- Mix the potatoes, margarine and 2 ounce.
- Flour to a smooth paste, roll out, and line greased patty tins.
- Reserve a little of this pastry to cut into thin strips for the top of the patties.
- Blanch and chop the almonds, mix together with the sugar, egg, remaining 1/2 ounce flour and cream, and work to a smooth paste.
- Fill the cases with this mixture, and place two strips of pastry across the top.
- Brush with egg and bake in a hot oven.
