Pork Tenderloin Creole

Ingredients

  • 1 1/2 pound pork tenderloin, sliced
  • 1 teaspoon salt
  • 4 carrots
  • 3 tablespoon flour
  • 1 onion, sliced
  • 3 tablespoon lard
  • 1/2 green pepper, diced
  • 2 cup tomatoes

Directions

  1. Dredge meat with flour; brown in lard.
  2. Pour tomatoes over meat, add seasonings, onion, carrots and green pepper.
  3. Place in covered pan and cook in slow oven (325° f) for 1 hour.
Note: Serve with Mashed Potatoes, Green Beans
