Plain Pastry

Ingredients

  • 2 quart flour, (2 pounds)
  • 4 teaspoon salt
  • 2 cup cold shortening, (1 pound)
  • 2/3 cup cold evaporated milk
  • 2/3 cup cold water

Directions

  1. Sift flour, then measure.
  2. Resift with salt.
  3. Work shortening into flour until appearance is like coarse corn meal.
  4. Add liquid and blend with a fork.
  5. Some flours absorb more liquid than others.
  6. Add only sufficient diluted milk to make dough soft enough to roll.
  7. Chill before using, if possible.
