Oyster Patties

Ingredients

  • 3 tablespoon butter
  • 1/2 teaspoon salt
  • 4 tablespoon flour
  • 1 cup milk
  • 1/8 teaspoon paprika
  • 1/2 pint oysters

Directions

  1. Clean the oysters by removing any shells, and drain off the liquor.
  2. Melt the butter, add the flour and salt, and mix thoroughly.
  3. Gradually add the milk, stirring constantly.
  4. Cook until very thick.
  5. Place the oysters in a pan and heat one minute this "plumps" them.
  6. Do not cook too long.
  7. Add the oysters to the white sauce, and serve immediately in patty shells which have been freshened in a hot oven.
