Ground Pork Croquettes

Ingredients

  • 1 cup chopped cooked pork
  • 1/2 tablespoon butter
  • 1/8 teaspoon paprika
  • 1 tablespoon flour
  • 1/4 teaspoon celery salt
  • 1/3 cup milk
  • 1/8 teaspoon onion salt
  • 1/3 cup crumbs
  • 1/4 teaspoon salt
  • 2 tablespoon egg
  • 1 tablespoon pimento, cut fine
  • 1 tablespoon water

Directions

  1. Melt the butter, add the flour, paprika, celery salt, onion salt, salt and pimento.
  2. Gradually add the milk and cook thoroughly for one minute.
  3. Add the meat and allow the mixture to cool.
  4. When cool, shape into the desired shape, preferably conical.
  5. Rollin the crumbs, dip in the egg and water mixed, then dip in the crumbs and allow to stand for fifteen minutes or more.
  6. Fry in deep fat.
