Finnan Haddie Au Gratin

Ingredients

  • 1 smoked haddock, finnan haddie
  • finely chopped onion
  • 1 can tomatoes
  • 1 teaspoon chopped parsley
  • pepper

Directions

  1. Split open finnan haddie and place in pan with slit side up.
  2. Cover with canned or fresh tomatoes, a little chopped onion and parsley.
  3. Season with pepper and bake slowly in oven for thirty minutes, keeping plenty of tomato juice on to prevent drying out.
  4. After baking thirty minutes cover thickly with grated cheese about half an inch thick with a generous sprinkling of paprika on top and return to oven for another half hour,.
