Egg Souffle

Ingredients

  • 2 tablespoon butter
  • 1 teaspoon salt
  • 2 tablespoon flour
  • 2 cup milk
  • 1/4 teaspoon paprika, or a pinch of cayenne
  • 4 eggs
  • 1 cup white sauce
  • 2/3 cup cooked peas

Directions

  1. Melt the butter, add the flour and gradually add the milk.
  2. Cook three minutes, add seasoning and the well-beaten yolks.
  3. Fold in the beaten whites and turn into buttered moulds.
  4. Set in a pan of hot water and bake in a slow oven until firm (about twenty-five minutes).
  5. Serve with a white sauce, highly seasoned, to which has been added one cup of cooked peas.
  6. Pour the sauce around the souffle.
