Date Cake

Ingredients

  • 2 cup evaporated milk
  • 2 tablespoon vinegar
  • 3 1/2 cup flour, (14 ounces)
  • 2 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1/4 teaspoon salt
  • 1 cup shortening, (1/2 pound)
  • 2 cup sugar, (1 pound)
  • 2 eggs
  • 2 pound pitted dates, (1 quart)
  • 2 cup nuts, (1/2 pound)

Directions

  1. Mix evaporated milk and vinegar.
  2. Sift flour, then measure.
  3. Resift with other dry ingredients.
  4. Cream shortening.
  5. Add sugar and continue creaming until light and fluffy.
  6. Beat in the eggs.
  7. Add dry ingredients alternately with the soured milk, beginning and ending with flour.
  8. Add sliced dates and chopped nuts with last few stirs.
  9. Pour into 2 greased tube or loaf pans.
  10. Bake in a moderate oven (350f) about 1 hour.
