Chocolate Pudding

Ingredients

  • 2 cup cornstarch, (10 ounces) or 3 1/2 cup flour (14 ounces)
  • 1 quart sugar, (2 pounds)
  • 2 teaspoon salt
  • 2 cup cocoa, (1/2 pound)
  • 1 quart cold water
  • 2 1/4 quart boiling water
  • 3 1/2 quart evaporated milk
  • 2 tablespoon vanilla

Directions

  1. Blend cornstarch, sugar, salt and cocoa with the cold water to make a smooth paste.
  2. Scald remaining water and the milk.
  3. Add cornstarch mixture and cook until thickened, stirring constantly.
  4. Cover and cook 30 minutes longer over a very low flame, stirring occasionally, or cook over boiling water 25 minutes.
  5. Cool.
  6. Add vanilla.
  7. If chocolate is used instead of cocoa: add 3/4 pound bitter chocolate to the milk-water mixture and heat until chocolate is melted.
  8. Add cornstarch-sugar mixture and proceed as above.
