Bettina's Peanut Fondant

Ingredients

  • 2 cup 'C' sugar
  • 1 tablespoon butter
  • 1/2 cup milk
  • 2/3 cup roasted shelled peanuts
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon vanilla

Directions

  1. Cook the 'c' sugar, milk, cream of tartar and butter until a soft ball is formed in cold water.
  2. Remove from the fire and allow it to cool.
  3. Beat until thick and creamy and add the nuts and vanilla.
  4. Shape into a loaf two inches thick and two inches wide.
  5. When cool and hard enough to cut, slice into one-fourth inch slices.
  6. Wrap in waxed paper and pack in boxes.
