White Bread
Ingredients
- 2 cakes compressed yeast
- 1/2 cup lukewarm water
- 1/4 cup shortening, (2 ounces)
- 2 2/3 tablespoon salt, (1 1/3 ounces)
- 1/4 cup sugar, (2 ounces)
- 3 1/2 cup boiling water
- 1 quart evaporated milk
- 6 quart flour, (6 pounds)
Directions
- Dissolve yeast in the 1/4 cup lukewarm water.
- Measure shortening, salt and sugar into howl and add boiling water.
- Add milk and when mixture is lukewarm, add the yeast.
- Sift flour, then measure.
- Add about half the flour and heat very thoroughly.
- Add remaining flour to make a stiff dough.
- Knead until smooth and elastic.
- Put into a greased bowl and cover.
- Let rise until doubled in bulk, about 2 hours.
- Knead again.
- Shape into bread pans.
- Let rise again until doubled in bulk.
- Bake in a hot oven (400f) for 45 minutes.
