Sturgeon Balls

Ingredients

  • 3 pound trimmed sturgeon
  • 3 tablespoon potato flour, or all-purpose flour
  • 1 medium onion
  • 1 pint rich milk, (more if needed)
  • 1 teaspoon mace
  • 1 tablespoon salt
  • 2 eggs
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoon pepper

Directions

  1. Grind sturgeon three or four times with onion.
  2. Put into a bowl and beat with electric beater while adding the milk slowly, add remaining ingredients and continue beating for about 20 minutes (more beating the better).
  3. Drop by tablespoon (the size of walnuts) in hot broth made from trimmings of sturgeon, with salt added.
  4. Cook 15 to 20 minutes in broth, sturgeon balls may be frozen for future use.
