
Sturgeon Balls
Ingredients
- 3 pound trimmed sturgeon
- 3 tablespoon potato flour, or all-purpose flour
- 1 medium onion
- 1 pint rich milk, (more if needed)
- 1 teaspoon mace
- 1 tablespoon salt
- 2 eggs
- 1/2 teaspoon nutmeg
- 1 1/2 teaspoon pepper
Directions
- Grind sturgeon three or four times with onion.
- Put into a bowl and beat with electric beater while adding the milk slowly, add remaining ingredients and continue beating for about 20 minutes (more beating the better).
- Drop by tablespoon (the size of walnuts) in hot broth made from trimmings of sturgeon, with salt added.
- Cook 15 to 20 minutes in broth, sturgeon balls may be frozen for future use.
