Spice Cake

Ingredients

  • 6 1/4 cup flour, (1 pound, 9 ounces)
  • 3 1/3 tablespoon baking powder
  • 1 teaspoon salt
  • 1 3/4 cup shortening, (14 ounces)
  • 3 1/4 cup sugar, (1 pound, 10 ounces)
  • 8 eggs
  • 2 1/4 tablespoon mixed spices, soaked in 2 tablespoons boiling water
  • 1 1/4 cup evaporated milk
  • 1 1/4 cup water, mixed with evaporated milk

Directions

  1. Sift flour, then measure.
  2. Resift with baking powder and salt.
  3. Cream shortening thoroughly.
  4. Add sugar and continue creaming until light and fluffy.
  5. Beat in the eggs, then the spices.
  6. Add dry ingredients and diluted milk alternately, beginning and ending with dry ingredients.
  7. Pour into greased layer cake pans.
  8. Rake in a moderate oven (375f) about 25 minutes.
